Why it's so special...

The Cornish Sea Salt Company has acquired many celebrity endorsements over the years, from Jamie Oliver to Rick Stein, and it is used in many of the world's top restaurants including The River Cottage, Yo! Sushi and Nathan Outlaw in the Burj al Arab in Dubai. But what makes Cornish Sea Salt just so special?

Well, Sea Salt has been harvested from Atlantic Ocean on the Lizard Peninsula on England’s rugged south west coast since ancient times, and the ruins of iron-age salt works can still be seen today.

A major factor for its prominence for such a long time was the huge fishing industry in the region, with the salt being critical to preserving the fish for market, but in the 1800s sea salt production fell into decline across the country as cheaper rock salt started to be mined.

Around 15 years ago, Tony Fraser, the founder of the Cornish Sea Salt Co. came across one of the iron-age salt works and questioned why sea salt was no longer produced in the area. He spent the next 3 years developing the concept for the Cornish Sea Salt Co, looking for the perfect location and working with environmental agencies to build a salt works that was benign on the unique environment of the Lizard Peninsula. In 2008, the Cornish Sea Salt Co commenced operations, only the 2nd company in England in 125 years to start producing sea salt.

Located in Porthkerris in Cornwall, the Cornish Sea Salt Co is situated next to grade A classified waters, denoting the highest grade for water purity. It is also sited by a protected marine zone, and therefore operates within the tightest of environmental standards.

The whole process of extracting the salt is quite a lengthy one, and they have made it as energy efficient as possible. Fresh sea water from the ocean is pumped into the works where it is carefully filtered using innovative technology that removes all impurities, leaving a saturated brine containing only pure salt and the minerals it contains.  The brine is poured into enormous vats and heated in the traditional iron age method.

Over 2 days, salt crystals start forming on the surface, and as the density of the crystals develop the salt sinks to the bottom of the brine. The crystals are hand-harvested at the right moment and are left to dry naturally. The water is returned to the sea through a natural fault in the rock face.

Cornish Sea Salt contains over 60 minerals due partially to the unique coastal geology of the Lizard Peninsula. Because of the high level of magnesium in the serpentine rock for which the Lizard is famous, the sea water and therefore the salt produced is high in magnesium.

Because of the unique mineral profile of the Cornish sea salt it also has a high flavor intensity which means individuals can reduce the amount of salt they add to their food, and chefs can reduce the sodium in their dishes while maintaining the flavor profiles.
